About Mac and Cheese Club

I’ve been in love with mac and cheese for as long as I can remember. Like most kids, mac and cheese was one of the few foods I’d eat without complaint. Unlike most kids, I never outgrew my desire to have it for as many meals as possible. If anything, my obsession only deepened.

One day, while sitting in a waiting room perusing a magazine, I stumbled across a roux based mac and cheese recipe. Suddenly, gourmet mac and cheese wasn’t something reserved for restaurants. It was something I could make. Armed with curiosity and adult money, I started experimenting with cheeses, textures, and techniques to see what makes a truly great bowl.

During the pandemic, I needed a creative outlet. I wanted something fun to do. And there isn’t anything more fun than mac and cheese. This led to the creation of this website. Mac and Cheese Club is where I wax poetic about the best food in the world. It’s packed with gourmet mac and cheese recipes, store brand reviews, and exploration of restaurant offerings. Our goal is to show people that “fancy” mac and cheese can be approachable for even the most inexperienced beginner.

I love to explore all things related to mac and cheese. Is there true value in using bronze-cut pasta as opposed to a more conventional type of pasta? How many recipes can I mac-ify? How far can I stretch the definition of mac and cheese? The limit may never exist.

    My families favorite dish is a good Mac and Cheese. I am in the ‘small macaroni noodles with a béchamel based sauce’ camp currently, but am very happy to venture out to learn more about other ways to cheese my mac!
